Baked Oats with Marine Collagen

Looking for a warm, nourishing breakfast that's easy to prepare ahead of time?

These baked oats have become one of my favourite breakfasts during the cooler months. They're simple to make, packed with wholesome ingredients and perfect for meal prep, making busy mornings that little bit easier.

Ingredients

  • 120g rolled oats
  • 2 eggs
  • 160ml milk of your choice
  • 2 apples, grated
  • 1 handful fresh or frozen blackberries
  • ½ teaspoon ground cinnamon
  • ¼ cup Aglow Marine Collagen
  • 2 teaspoons honey
  • 2 tablespoons flour
  • 1 teaspoon baking powder

Method

  1. Preheat your oven to 180°C.
  2. Line a small baking dish with baking paper.
  3. In a large bowl, combine the rolled oats, Marine Collagen, cinnamon, grated apple, flour and baking powder.
  4. In a separate bowl, whisk together the eggs, milk and honey.
  5. Pour the wet ingredients into the dry ingredients and stir until well combined.
  6. Spoon the mixture into the prepared baking dish.
  7. Scatter the blackberries over the top.
  8. Bake for 20–30 minutes, or until the centre is just set and no longer wobbly.
  9. Allow to cool slightly before serving.

Serving Suggestions

This recipe makes approximately four servings, making it ideal for meal prep.

Enjoy a slice:

  • Warmed gently before serving.
  • With a dollop of Greek yoghurt.
  • Topped with fresh berries.
  • Drizzled with a little extra honey if you prefer a sweeter breakfast.

Make It Your Own

This recipe is easy to customise.

Try swapping the blackberries for:

  • Blueberries
  • Raspberries
  • Mixed berries
  • Sliced pear
  • Feijoas (when in season)

You can also add chopped walnuts, almonds or pumpkin seeds for extra crunch.
